- • 2 cups all-purpose flour, leveled with a spoon (250 grams)
- 1 tablespoon baking powder
- ¼ teaspoon baking soda
- 2 teaspoons sugar
- 1 teaspoon salt
- 6 tablespoons cold unsalted butter cubed (85 grams)
- ¾ cup cool buttermilk plus extra for the biscuit topping (180 ml)

INSTRUCTIONS “QUICK and EASY BUTTERMILK BISCUITS”
1. Set the oven temperature to 450°F (230°C). Put aside a sizable baking sheet that has been lined with silicone baking mat or parchment paper.
2. In a sizable mixing bowl, thoroughly combine the flour, baking powder, baking soda, sugar, and salt. Using a pastry cutter (you may also use a food processor for this step) and the cold, cubed butter, combine the ingredients until the butter is the size of small peas. Mix the ingredients gradually until the dough begins to come together before adding the cool buttermilk.
3. Scoop the dough onto a surface that has been lightly dusted with flour, then gently knead it with your hands. Make a rectangle out of the dough and fold it in thirds (like a letter). The dough should be turned, and any crumbs gathered and flattened again into a rectangle. Folding is repeated two more times.

4. Roll out the dough to a rectangle 1/2 inch thick on a surface lightly dusted with flour. Cut out the biscuits with a 2.5-inch biscuit cutter that has been floured. Avoid twisting the biscuit cutter while using it; instead, press it straight down and draw it straight back up.
5. Once you have 8 to 10 biscuits, keep collecting any leftover dough, flattening it back down to 1/2-inch thickness, and cutting. Since the biscuits won’t be as good as they will be if you continue to work the dough, I advise attempting to get as many as you can the first time.
6. Place the biscuits in a touching pattern on the baking sheet. Each biscuit should have a thin layer of buttermilk on top.
7. Bake for 15 to 17 minutes, or until just beginning to turn golden. If desired, remove from the oven and brush with melted butter. After a brief period of cooling, serve and savor!
